1 avocado - peeled, pitted and diced
1/2 cup fresh corn kernels
2 tomatoes, diced
1/4 cup chopped fresh cilantro
1 tablespoon fresh lemon juice
salt and pepper to taste
Using a juicer, extract the juice of the 4 large tomatoes.
In a medium bowl combine the tomato juice, avocado, corn, 2 diced tomatoes, cilantro, and lemon juice. Season to taste with salt and pepper. Transfer to serving bowls Ingredients: 3 garlic cloves; salt; 3 soup spoons olive oil; 4 soup spoons vinegar; ? cucumber; 2 ripe tomatos; 1 green pepper; 200g hard bread (from the day before); oregano.
Description: In a mortar crush the garlic with the salt until you get a mash. Put this mash in a terrine and add the olive oil, the vinegar and the oregano. Reduce one of the tomatos to purée and add it to the previous mixture. Cut the other tomato and the cucumber into small cubes and the green pepper into thin slices. Put them in the terrine and add 1,5l of cool water. When serving add the bread cut into small cubes. Serve cool.
It can be served with smoked ham cut into small pieces or with fried fish.
