If you're going for a spicy dish, then this recipe is excellent and usually used with Indian dishes (as they can get quite hot). The yogurt cools the palate. A good tip if you come across something too spicy, dairy does the trick! Anyways the recipe:

Yogurt Mint Sauce
1/2 cup plain yogurt
2 sprigs fresh mint, chopped
1 teaspoon white sugar
1 teaspoon salt
1/4 teaspoon cayenne pepper, or to taste

In a small bowl or blender, stir together the yogurt, chopped mint, sugar, salt and cayenne until well blended. Serve immediately or chill for a while to let the flavors come together.

Or, for a more gourmet type dish:

New Zealand frenched rack of lamb, one per person (This means the meat has been removed from the ends of the ribs, leaving the eye of the meat.)
Salt and pepper

Sauce:
One tablespoon finely chopped fresh mint
One tablespoon orange marmalade
Two tablespoons sweet chili sauce
One-quarter teaspoon Dijon mustard
Mint demi-glace
Two ounces demi-glace combined with a half-ounce of chopped fresh mint

Season lamb and place on charbroiler, turning every five minutes. The meat should still be pink when it is ready to eat.
In bowl, combine the sauce ingredients and whisk until smooth.
Once the lamb is done, slice through the middle of rack and intertwine the bones. Drizzle with mint demi-glace and serve with side of mint marmalade sauce. Roasted-garlic mashed potatoes are a nice side dish. Top with an edible orchid.

Other Answers:
This sauce is especially good with lamb. The sauce should be made before you begin cooking the lamb so the sugar has time to dissolve while the lambs cooks.

1/2 cup fresh mint leaves (loosely packed), chopped

1/4 cup red wine vinegar

1 tablespoon sugar

table salt

Stir together mint, vinegar, and sugar in small bowl. Let stand about 20 minutes to allow sugar to dissolve. Season to taste with salt, and serve with lamb.
