Chicha de Papaya
2 cups papaya, peeled and seeded, cut in pieces
1 ? cups papaya nectar (or peach or apricot)
1 cup pineapple juice 1 cup ice cubes
? cup lime or lemon juice
2 cups sparkling water, ginger ale or 7-Up
Blend juices and ice cubes thoroughly in blender. Pour in pitcher and add soda choice. Serve over ice.
Candied Plantain "Temptation" (Panama) serves 4 to 5
Tentacion (tayn-TAS-yon) These are so good it is a temptation to eat them. If you cannot find plantains at your grocery store, you can substitute large firm bananas that are not too ripe.
3 large ripe plantains
1 tablespoon each oil and butter
1 cup sugar
1 ? teaspoons vanilla
1 ? cups water
dash of cinnamon
Hit the plantains on all sides with a wooden spoon to soften. Peel and cut into five pieces each. In a large skillet, melt butter and heat it and the oil to high. Add the plantains. Fry until brown.
Combine sugar, water, vanilla and cinnamon in a large measuring cup. Reduce heat to low and pour in pan over the plantains. Continue cooking until the liquid thickens, about 15 minutes.
Rice with Chicken (Panama) serves 8
Arroz con Pollo (ah-ROHSS kohn POH-yoh) Rice with chicken is a celebration food in many Latin American countries.
2 large chicken breasts
2 thighs
? cup whole green olives
1 finely chopped onion
2 tablespoons capers (optional)
1 finely chopped green bell pepper
? cup raisins
2 tablespoons oil
2 teaspoons Worcestershire sauce
? teaspoon achiote spice*
? cup frozen peas
3 cups rice, uncooked
salt to taste
? cup shredded carrots
fresh cilantro
(*achiote substitute - if you do not have a Latin American market, you can substitute the following mix: 1 ? tablespoons paprika, 1 tablespoon white vinegar, ? teaspoon dried oregano, 1 minced garlic clove and ? teaspoon ground cumin. Stir until well-blended. You can keep this in the refrigerator up to a month)
Cook chicken with ? of the chopped onions, ? of the bell pepper, salt and 4 cups water. Cook until tender. Remove chicken and set aside. De-bone and shred chicken when it is cool enough to handle. Strain broth and add enough water to measure 5 cups. Set aside. In a large saucepan or Dutch oven, heat oil with achiote. Sauté remaining chopped onion and bell pepper until tender. Add rice, carrots, olives, capers, raisins, Worcestershire sauce, salt and 5 cups of broth. Cover and cook until the rice is tender, 25 to 30 minutes. Stir in peas and cooked chicken pieces. Keep on low heat until ready to serve. Garnish with cilantro.
