In Puerto Rico we use something called "Sofrito" which is basically garlic, peppers, onion, cilantrillo, culantro(recao)and parsley all blended in with salt and olive oil.
This is used to gave extra flavor to our beans, stew rices, stew meat and stew chicken, grounded beef, and anything else you want to.
