What is the differance between salsa and picante sauce? Can they be interchanged? I make gringo versions of mexican food like tacos and burrittos and I never know which one to use. And for dipping chips? Ive asked mexican frends and they didnt know. I tried looking at the bottles they were in but they were the same, had same vegitables on them and same ingediants..just diffferent names. Any purists out there know the difference? Does it matter?

SALSA OR PICANTE SAUCE
1 qt. canned tomatoes
1 med. onion
1 (4 oz.) can green chilies, chopped
1/4 of 4 oz. can diced jalapenos
2 cloves garlic
1/2 bunch fresh cilantro
1/4 c. vinegar
Put tomatoes, onion, garlic, cilantro in food processor until desired consistency. Eat with corn chips or tacos.

Salsa is thicker than picante sauce because it is cooked longer & the juices evaporate. You can interchange in most recipes, just cut back on liquids when using picante sauce.

I don't know for sure. My perception is that picante is thinner, while salsa is more chunky. I'm with you though. I eat mexican almost everyday and I love it! they are one in the same, picante just means that it picas or it is hot, picante usually involves only tomato as the base. Salsas can be tomatillo based, chile based, avacado based, etc. Picante is more similar to pico de gallo,, I perceive it as thicker than salsa. I would say they are interchangable.
From what I know, being mexican an having lived in MExico. We referred to salsa picante to the bottled type ie)tabasco, valentina, cholula etc. Salsa is the one you make fresh.
