The meat is excellent, I suggest the OUTBACK restaurant if you have one in your area. They have aligator and roo meat on the menu and both are excellent

Kangaroo's are similar to cattle and sheep in that they are herbivors - they eat vegetation and their meat is refered to as "red" meat. However the taste is VERY strong and although can be eaten as a steak - a casserole is much, much more palatable.
And chickens and fish you mention (and pigs) - they are omnivores - they eat both vegetation and meat (both alive and dead).
Your choice.
In my opinion, animals shouldn't be eaten. Period.
