Indian cuisine is very diverse and is a result of India's diverse population. Within these recognizable similarities, there is an enormous variety of local styles.

Typically, North Indian meals consist of chapatis or rotis and rice as staples, eaten with a wide variety of side dishes like dals, curries, yoghurt, chutney and achars. South Indian dishes are mostly rice-based, sambhar, rasam and curries being important side dishes. Coconut is an important ingredient in all South Indian food.

Besides the main dishes, various snacks are widely popular in Indian cuisine, such as samosa and vada. Among drinks, tea enjoys heavy popularity, while coffee is mostly popular in South India. Nimbu pani (lemonade), lassi, and coconut milk are also popular, while India also has many indigenous alcoholic beverages like Fenny and Indian beer.

Several customs are associated with the way in which food is consumed. Traditionally, meals are eaten while sitting on the floor or on very low stools, eating with the fingers of the right hand.

Spicy stuff, usually a lot of curry, generally a bit greasy. Damn good stuff though, and arguably some of the best food in the world. Served with either rice or naan ( a sort of pan-bread, somewhat like pita or a tortilla in shape, but more bread-like).
Being from Indiana myself since you said Indian food I think of native American food which is typical in Indiana, not India! So I would say, since I grew up among the Miami Indian tribe all of my life in Miami county, Indiana, that they eat a lot of soups, Bisen, a lot of red meats cooked. Indians or "Native Americans love a lot of freshly grown vegatables. most of their soups are awesome! Huge chunks of everything you can imagine in them. I mean, when they do up a pot of soup its a massive pot for the whole tribe to come and have a bowl while socializing. Indians as I know them are VERY social people. Just don't cross them.
