I use a cast iron skillet and peanut oil.
I wash the chicken and remove excess fat but leave the skin on. I mix all-purpose flour, cornmeal, salt, pepper and any other spices I'm in the mood for (I like spicy chicken). I don't use anything with paprika in it because paprika burns very easily. You have to adjust the spices to taste but I use a lot of pepper. I also use garlic powder (not garlic salt!), kosher salt and other spices.
If you want to pre-soak the chicken, try soaking it in a mixture of milk, water and tobassco sauce if you like spicy chicken. Soak it overnight in the refrigerator.
I put the heat on medium and drop in the battered chicken. I fry slowly and turn only 4 times per piece. Comes out crunchy and with a lot of the juices left in the pieces. Use more cornmeal in the batter if you like cornmeal chicken.

put it in a deep fryer cuz it saves the juies and gives it more tatste as long as you get it out once it turns brown it will only take a couple minutes Just bring it to grandma and she will take care of it.

I sprinkle mine with season all...then I put the chicken on a cookie sheet and put the broiler on in the oven and it's pretty quick and yummy...I think you just cooked it well. Roll it in seasoned self rising flour and fry it in oil
