Cooked in this manner , the pork comes out super "juicy" & perfectly cooked.
A spit is great! But you have to "turn" it constantly,(unless you have an electric spit).
Spitted or "buried", they both produce a quality pork, however , for shear "drama", "Hawaiian" is the way to go!

Slowly roast it over a grill (big one). Depending on the size of pig, a big one may take almost two hours to cook over medium fire. But, you could have your guess or yourself cut it bit by bit as the out side get cook first. Done it lots of time, fun in the lawn for big party.
Both spit and pit roast are delicious. Spit is easier, you don't have to dig a hole, find banana leaves, etc. You also get cruchier crackling with the spit. But you get a nice earthy flavor in the pit, and you can do veges, chickens etc at the same time. Your call.

The best way to cook a pig is in an imu. Here are the steps used to create one:
1. Select an existing pit to use or dig your own. The hole should be up to 5 feet deep to hold a 125-lb. pig.
2. Fill the bottom of the pit with dry, rounded rocks.
3. Start a fire in the pit with kiawe wood and other kindling.
4. Watch for the rocks to turn white.
5. Remove the larger pieces of wood so they don't continue to burn and scorch the pig.
6. Form a bed of rocks that will support the pig at the bottom of the pit.
7. Lay banana stalks over the hot rocks to cover them. They'll serve as a liner between the pig and the rocks.
8. Prepare the kalua pig on a table (or on planks) by sticking hot rocks in its armpits.
9. Tie the pig with chicken wire so the rocks stay put.
10. Move the pig carefully and place it into the pit. You'll need several people to carry the weight.
11. Set moist banana leaves on top of the pig to seal in the heat.
12. Wet a heavy tarp and lay it over the hole to trap the heat and steam inside.
13. Shovel 6 inches of sand on top of the mound to close it off completely.
14. Allow approximately 9 hours or more for the pig to roast.
Warnings:
Make sure you put only dry rocks in the pit. If there's any moisture in the rocks, they can shoot out of the pit and cause serious injury.
If you can get an oil drum and build a smoker/grill out of it. You can smoke the pig with apple chips on a spit.
Cut a large window out of the drum with a blow torch. Make a door out of that piece with some hinges. Add a smoke stack on top. Leave 3/4's of the open space for the pig to be raised off the coals on the bottom and 1/8th of the space on the bottom for hot coals and smoke chips. Put some legs on the bottom, or just put the whole thing on a sawhorse. Run a metal rod through the pig- head to tail and clip it in place leaving room so you can rotate it preferable 45 degrees every 3 hours for 12 hours.
You can buy this apparatus at BBQ supply or restaurant supply, already made.
Or you can tend a fire and roast it on a spit without a covering, and just use lots of wood.
