Wow, that is a tough one to answer. It really depends on the type of fish you are cooking.

If you are cooking something delicate like trout or flounder, for example, an excellent way to cook these is to make a pocket from aluminum foil, add a small bit of butter, or margarine, salt and pepper, and any herbs you like (fresh works best). If you opt for pan frying, always use a good non-stick pan, very hot. Delicate fish will cook very quickly, so beware not to over cook.

if you are cooking a heartier fish, like salmon. swordfish, tuna or grouper. you can grill the fish on a a barbecue, pan fry, or oven roast. If you use a grill, I recommend mixing in a small bowl, some olive oil, mixed with some canola oil to brush on the grill right before you throw on the filet. The grill must be super hot, though, or inevitably, the filet will stick.
