Definitely hire a caterer to deal with this. You don't want to ruin your day with these kind of distractions, and a caterer is not that expensive, especially for a BBQ.

Instead of BBQ, have a spit BBQ. whole sheep and pork, what ever is your favorite. You have to hire the machines and the butcher can prepare what you need. Maybe also speak to a caterer, they normally do everything for you and you are left with all the stress!
either hire a caterer (best bet) or go to a party rental place and rent a large grill or 2; my cousin had just this type of reception and it was a great change from the traditional, but her father is a caterer........
