anyhow:
-asian food, obviously (make sure u sample the food before u decide to include it though)
-asian family film? something like kung fu hustle, although it might be a lil bit violent for an 8-year old
-red lanterns
-japanese kites (requires an outdoor,windy picnic obviously)
-toy nunchakus or weapons for the boys (and girls?)
-oragami (i happen to be really good... but excuse my ego)... they say that 1000 cranes made would grant you a wish (but since i dont think every guest is interesting in making cranes, let alone a thousand)... maybe a couple made would be good luck for ur niece
anyhow, good luck planning it... just a warning, arts and crafts may not be for everyone (although games like chinese checkers or whatever might be all right), considering the attention spans of adolescents

Gotta have them big, big drums. And a gong. Kids love gongs. And maybe six or seven tuba players. Drums 'n gongs 'n tubas.
Get a kimono for her.If you cant,get a pretty silk bathing robe and have her tied up in a bun and secured with chopsticks.Apply red lipstick on her lips and cheeks.Sushis and yakitoris are definately required.Have her guests dressed up in pretty silk clothings and you could have a face-painting(like Geishas) for all the guests b4 they enter the house;>Get a white rattan chair like a thrown and decorate with red ribbons...play japanese music...get her involve in the planning.It would make a whole lot of difference especially to her!!
I just went to a Asian-inspired nightclub in Vegas and they had party favors that I brought home for my kids. A woman carried around a tray of origami cranes that she had made. A man painted your message in Japanese characters onto a bamboo fan. Your 8-year-old's friends will love these and they can do them themselves.
I think the kids would enjoy making their own sushi rolls. You can stick with the traditional ingredients of rice, vegetables, and raw fish, or you could mix things up and make "dessert sushi." I imagine that kids would love these sugary treats and they look easy enough for them to make, with adult supervision of course.

You could also show a Japanese animation film and hand out "Hello Kitty" party favors.

a kimono would be a neat idea and for food think rice rice rice and egg is also a good idea
I'm worried that if you're not actually Japanese/Asian, you may risk missing the boat on the whole 'cultural sensitivity' thing. I'd shy away from using Japanese or "Asian" (hard to define what exactly that would be) as a cultural decoration...I think it would be difficult for you to do the cultural traditions justice and respect, unless you're more familiar with them (or have a friend who can help). So, maybe at least include a map of Japan/Asia, and be able to reference what the traditional symbols and clothing you're using, to the time, location and meaning/context.
Decorate with paper cranes and paper lanterns, paper fold up fans make great favors.
