You are going to have to make the jello in stages. The first batch poor just enough jello into the bottom of the bowl to cover the apple, put it in the fridge and let it set up completely. When it has set, you can add the rest of the jello to fill the bowl then pop back into the fridge. Using this technique, you can also alternate colors and flavors of jello, making layers. Just let each layer set up completely before adding the next.
Do your jello in stages. Put the apple at the bottom and cover with enough jello that it will stay after hardening. You will need something to stabelize the apple and hold it down. Once the jello hardens, remove your "holder downer" (my daughter word) then add more jello (even a different color). Allow to firm. That apple should stay put.
That's an interesting problem! Because, of course, an apple will float! I have two ideas...
1. Let it float and then turn the jello out onto a plate - the apple will then be at the bottom!
2. Set some jello first shallow around the apple in the bowl. This should hopefully hold the apple down - then add some more jello to set over that...
otherwise you may have to just sit there with a skewer and hold the apple down for a very, very long time. sigh
