i hard boil 12 eggs, halve them and place them in a dish then mix seafood sauce, mayo and a bit of salad cream and pour it over eggs, then sprinkle with paprika.

Little Smokey sausages in BBQ sauce are great.

I Make boiled asparagus with curry powder and mayo dip. its delicious!! Everyone loves it not matter how finicky their taste buds! For easter I made three bundles of asparagus for 7 people and when I got home it was all gone!

Get loads of pork spare ribs (they are quite cheap!), bring them to the boil and then simmer for an hour and then marinate them overnight ideally or as long as you can in:

Then bake in a medium oven for about an hour and throw them all in a bid serving dish for people to help themselves!
You don't have to boil them first if you don't want to but I find it makes them more tender. If you don't just bake them longer on a lower heat! Enjoy the buffet!

The egg roll wraps can be found in most supermarkets. If they only have the full sized ones then cut them in half.
You can put anything inside them. I'm fond of bay scallops but use your imagination, it's hard to go wrong. Then wrap, seal and deep fry. Then put them on a rack in the oven at 200F until you serve them or freeze them and reheat the next day.
Try to make things that can be prepared the day before. Cook as little as possible on the day of the party, you'll enjoy the party more.

Quartet pita bread with a spicy chick pea stuffing and almost anything else. The chick pea stuffing acts as a glue to hold the little sandwich together but ham, 2 inch lengths of asparagus sauteed in garlic, dried tomato -once again be creative.

I always do loads of chicken wings in teryaki marinade (soy sauce, honey ketchup, garlic, ginger, chilli, orange juice, tomato ketchup, vege oil. you need about a cup of each of the liquids (a little less honey) mix them all in a microwave safe dish and mess about with the balance until it tastes good to you. Mini Quiches (for each batch of 24 ish) Rub in 1T of butter into 1 Cup of plain flour, add 1 egg, a pinch of salt and enough iced water until you can form it into a ball. The filling is 2 eggs, 2 egg yolks, about a cup of cream and a cup of milk, salt, pepper, bacon, mushrooms, onions, broccoli, sweetcorn, peppers, cheese etc any choice you like, whisk the wet ingredients then add your fillings. Another really good one for lots of people is pizza pinwheels, sheets of puff pastry, spread them with tomato paste, then cream cheese and sprinkle on finely chopped ham and mixed herbs, roll them up, slice into pieces about 1cm wide and bake in the oven for about 15 min. YOu can add whatever you like as long as it's really finely chopped.

4 cups brown sugar
2/3 cup soy sauce

Drain crestnuts, place in large pan with water, brown sugar and soy sauce. simmer for 10 minutes { stiring often, will burn easily} drain out. wrap each one with 1/2 piece of bacon. Bake for 8 to 12 minutes or until bacon is brown.
STUFFED MUSHROOM CAPS
9 boxes fresh button mushrooms
3 loaves of bread {tore into pieces}
1 1/2 cup onions {diced}
1 1/2 cup celery {diced}
6 cups chicken broth
4 eggs
2 lbs siced swiss cheese { cut into 2 inch pieces}
Pop stem off each mushroom, wipe off cap with wet paper towel, place im cookie sheet
Chop stems, place in sauce pan with onions, celery & broth.
simmer until veggies are tender.
mix broth eggs into dried bread. Spoon some of mixture into each cap. Bake at 350 for 25 minutes, or until golden brown.
Remove from oven top each one with square of cheese, return to oven for another 5 to 7 minutes until cheese melts.

20 packs thin sliced dried beef {like budding}
remove pickles from juice, set aside.
