Honestly, I would like nothing more than to have a kid day - for myself. I think you should rent a big blow up castle with the balls inside and a slip n slide, horseshoes, badminton and super soakers. Set it all up beside a pool and do a gigantic cookout (lots of beer) with a Hawaiian theme.

Give him an ounce of his favorite food for each year. Wow! Two pounds of his favorite food! Write a poem to go with it, describing what each ounce means. he'll love ya for it.

Send him on a night cruise in a lap dance limmo, where throughoutthe whole journey they are wiggling their fit toned bodies all over him. he will thank you for it.
you should take him out to dinner just the two of you. Then when he gets home have a lot of people suprise him in the basement and there you will have a party. He won't expect it. Make it a costume party where each couple dresses up like a famous couple.
Make sure plenty of beer is on hand, Get a huge cake, And for entertainment, Swap with other couples. Have fun.
Decorations - buy some bunches of long twigs; put them in big containers - terracotta pots for example; steady them with something like sand or gravel; decorate the twigs with white christmas lights. Put on the floor and on tables.
Candles in bags - put a tea light in a jar in a brown paper bag. These make great lanterns, especially in a garden.
If indoors (or your outdoor party is rained off) fetch in a garden table & chairs complete with garden umbrella for a corner of the room. Decorate umbrella with white lights.
Helium balloons (from local party suppliers) in bunches on different lengths of ribbon look great in corners and tied to chairs etc. Colour theme these to napkins, paper cloths, plates (see website below) etc.
Food - did a hog roast last year for the first time - would really recommend it. Looks impressive and tastes divine!

Maybe set your theme around his favorite team, with colors, banners, cake etc. The person who suggested you going out to dinner together and then the surprise would be afterwards at your house had a great idea - your fiancee won't be expecting anything by that time and you can make sure he gets there on time!
You might like to have karaoke - that's always fun and popular, and you can choose songs that mean something to your fiancee from throughout his life. Can you get pictures of him as a kid and paste them (or copies) on a big banner or poster? (Get his family to help with this.)
