I gave the gift of single people recipes to my sister when she moved into her first apartment: Rachael Ray: 2, 4, 6, 8 Great Meals for Couples or Crowds. This way, you can either half the recipe of 2 or you can make the regular recipe (for 2) and then you can have some leftovers for a night when you don't feel like cooking or lunch the next day.
My sister loves the cookbook and has made her life quite a bit easier.
Cut the recipe in half, and if there's still leftovers, eat 2 days later for dinner again (I always skip a day before eating the same meal!). Or divide into single serving plastic containers, and freeze. I do this; it's really handy to take to work for lunch.
Sure; if you like pizza, you can easily make personal pizzas with regular bread, spagetti sauce, pepperonni, and mozzarella cheese. Medium toast the bread, add the sauce, add the cheese, and the pepperoni (or any other toppings you might like) and put it in the oven for about 5-7 minutes at 360 degree.
Another easy recipe can be a stuffed baked potato.
Put a good size potato (or 2) in the microwave for about 12 min (inside a plastic bag), cut ham, american cheese, mushrooms, onions, etc...(whatever ingredients you wish to add), take out the potatoes, cut them by the middle (half way), add butter, sour cream, and the rest of the ingredients and voila!!
If you like fish, you will like this one:
put one or two pieces of fish to defrost (in the microwave or in warm water), cut two cloves of garlic, and toast them in butter...Add the fish, grab a hand full of frozen vegetables and cook them with a little bit of butter, salt and pepper...If you wish to add mashed potatoes, put a single potato in a plastic bag and proceed the same way you did with the stuffed baked potato.
Finally, if you like tuna, you will love this one.
Cut 1 tomato, 1/4 onion, 1 pickled jalapeno into small pieces, mix a can of tuna fish, add lemon, salt and pepper, and eat it with your favorite crackers.

Buy yourself a foodsaver machine and make anything you'd like and pack it into individual servings. This way you do not have to limit yourself to a particular recipe just because you are cooking for 1. You can even store soups in these bags. I swear by my machine. I just had an Italian themed party and made my meatballs ahead of time and they tasted as though I just took them off the stove.
It's hard to make things in small batches, mostly i find because i end up using half a cucumber or most of an onion.
things that are great the first night and even better defrosted in single serve bags a week (or three) later:
lentil soup
lasagne
veg and bean curry
chili
mashed potatoes with corn,peas,beans,etc as a single serve side
things i make for myself all the time:

portabello mushroom as burger with pesto and mozz on bun.
stuffed pepper,artichoke, tomato, etc
canned tuna with beans, veggies, onion, oil/lemon salt/pep
pasta with jarred pesto or jarred sauce

french toast, egg sandwich, etc
stir frys
roasted veg with balsamic dressing
