Chefs in their own restaurants have large egos and not a lot of time to be trying new stuff. So I would get the product to them with ou going directly to their restaurants.

Hate to inform you but the fly-swatter has already been invented. Java Juice Extract has been around for a while now, and has been incorporated into many already used recipes. Good luck with your "new" cooking ingredient.

There are hundreds of brands of tires and donuts and sweaters and cars, all with a huge market and all profitable.

Take some samples to restaurants. Have some ideas/recipes for using it and maybe a sample of a dish containing the ingredient. But if you are serious, get a patent first. I have worked in the food industry for many years and if your product is good you don't want someone to steal the idea.
