No, it doesn't make any sense. It doesn't go sour, it goes bad, as in a rotten, moldy, thin mess if you keep it around a while after its expiration date.
when it gets all creamy~~~
it gets mold on it. just about everything can go bad.
It is already sour so if kept too long it putrifies. Ugh and stinks.
