I've made two different recipes for peanut brittle that are suppose to be crunchy and everytime they come out chewy. What am I doing wrong?

Answer:
We make peanut brittle at my church and we just follow the recipie (our recipie doesn't take peanut butter but it does take peanuts) make sure that you are getting your peanut brittle to the right temperature by using a thermometer. We got to 250 degrees before we add peanuts and then three hundred degrees before we pour. Hope this helps you.
your using CHEAP PEANUT BUTTER! way to much oil in the peanut butter.. buy a better brand JIFF
generally,a recipe that iincludes baking soda will do the trick
You didn't cook it long enough. Get a candy thermometer and cook all the way to "crack" stage being careful not to scorch it. As an added note, I had a bad thermometer one time - when I replaced it, my candy came out better. Good luck.
Are you using the candy thermometer? Chewy means that the sugars didn't caramelize properly - you didn't get to the right heat for long enough.
baking soda
You're not getting your sugar hot enough to reach the hard-crack stage. Use a candy thermometer next time. Hard Crack is maked on it.
are you cooking it long enough cuz i think the tempature needs to be real hot , before you have to put in the finale ingredents.
