Answer:
- layers are not stacked until they get to the location
- cakes are chilled so that frosting won't melt or get runny during the trip to the location
- frosted cakes are packed in cake boxes or containers to minimize damage done
- doing all of those things won't guarantee a perfect cake, they always have little touch ups to do once they get there and assemble the cakes
assemble (stack) them at the wedding
Why didn't I think of that?!
They usually assemble it in the party venue, although it should be partially decorated with icing...all the little bits of details are added later on.
They make all of the cakes and take them flat like in a tray or in seperate boxes. Once the baker gets to the place, they usually have people to help them carry the different cakes in, so they don't make a bunch of trips.
Lots of parts are plastic like the Poles (columns) that cake layers stand on. There is a plastic or cardboard circle, usually smaller than that layer between each layer to keep the cake from caving in. Some have pretty steps and wedding people the same colors. All Pretty Plastic. Very Pretty
Two people carry them in on wheels!
