I'd have chicken wings or tenders, plenty of chip & dip, cocktail smokies, a giant sub sandwich, and fruit & veggie trays.
Beverages to suit the crowd. (you could always get a keg)

kabobs/ chicken or steak with veggies and fruit like pineapple on skewers
veggie and dip tray (of course)
build your own burrito bar ( have all the fixins available for your guests to pick and build their own burrito)
chili cheese queso (velveeta cheese and chili )

sub sandwiches (hot or cold)
finger sandwiches (tuna or ham salad)
cheese ball and crackers
sausage balls
deep fried jalapeno peppers stuffed with cream cheese or pimento cheese
