I eat gluten free, too bad he doesn't like the bread alternatives. Kinnickkinnick has some great bagels you can do sandwiches with. I love Food For Life Rice Tortillas, I make wraps with them for lunch with turkey meat or chicken, lots of lettuce, tomato, and avocado and have baby carrots along with. You could use corn tortillas for the wrap but when not heated up they get a little dry and tear, you would have to experiment there.
If you or he cooks, what about making cassaroles ahead of time and freezing in single size portions? You can make mexican lasagne and use corn tortillas as the "noodle" layer or you can make regular lasagne and use rice lasagne noodles found at the health food stores or on-line at a gluten free grocer, or home made soups and stews. Or make bigger dinners and then just send him leftovers for lunch.
Also there are gluten free frozen meals, Amy's is one brand that I know has some gluten free options at the health food stores, same for canned soups, as always check labels to make sure they are gluten free.
Tuna, or chicken salads, with gluten free mayonaise.
Salads with different lettuces, vegetables, steak, chicken, turkey, or gluten free ham, cheeses and gluten free dressings.
Pasta salads using rice pastas
You can use rice cakes (I know not very appealing but if he doesn't like the breads...) to put different toppings on, peanut butter and jelly, or cream cheese and meats.
Oscar Meyer hot dogs I think are gluten free, check labels, and there are gluten free hot dogs at the health food stores.
Nuts, cheese, fruit, gluten free yogurt, cut up veggies and hummus, fruit smoothies.

Or a sandwich on rice CAKES instead of bread?
How about rice or corn cereal...it doesn't HAVE to be a breakfast food.
Stuff a tomato with tuna or egg salad, thats good, as is stuffed zucchini (but use meat & tomato sauce & serve hot).
Good luck--you're going to need some real creativity!
I don't know if he has any other dietary guidelines, but you could make him some fried rice or rice pilaf with lots of veggies and a little bit of meat or seafood even tofu would be good. what about vegetable salads? here's my mom's fried rice recipe
chop 2 slices bacon and fry crisp
remove bacon from pan and pour out fat
add a little bacon dripping or olive oil and saute:
1/2 chopped onion or some green onion
1 stalk celery chopped
1 carrot chopped
Move veggies to side of pan and scramble 1 egg in the pan (you might need to add more fat)
When the egg is cooked add 2 cups cooked rice, the bacon, 1 cup frozen peas or other veggies you like and season to taste with soy sauce and black pepper
feeds about 4
tuna or chix salad rolled in to lettuce leaves
ice berg, romain, boston bib, or maybe flat parsley
