He's not a big eater and he has an ulcer, so what should I make? And I'm not the best cook, so it should be kinda simple but not too simple. I want this to be a nice dinner but not to fancy.

Answer:
First of all do not make spicy foods because his ulcer could worse! Try to make a good portion of steak and broiled potatoes or other main dish and a side dish of rice with ingredients of your choice or another side dish of your choice and try to make a special salad for him and try to know what kind of sweet things he likes for dessert; you can try with meringues, key lime pie, cherries or try making a dessert of your own, the most important thing is that you make a dinner that comes from your heart and something that your boyfriend could remember as a good evening dinner!!

Good luck and hope this help you to make a special, simple and not fancy dinner! Have a nice dinner!
Dont make anything then .

If you are not the best cook theres a nice chance of him leaving you . why whould you wanna date or marry someone who dosent know how to cook ?
Here is an idea.
Roast chicken with potatoes and carrots, very easy and can be made in one dish.

Buy a chicken (1lbs per person), stuff the chicken with a lemon cut in half.Rub salt and pepper over the chicken, add a can of chicken broth and put in the oven at 350 for 20mins to 25 mins per pound. (In a roasting Pan). 45 mins before it is done add baby carrots and roast potatoes cut in half.
After it is cooked (the legs should be able to be pulled off) take the chicken out and cover it and let it sit for about 5 mins.

IF you want you can take out the potatoes and carrots , put them in a steel bowl and put back in the oven for the 5 mins.
With the juice of the chicken add flour and mix until there are no lumps..makes a nice gravy.

The good thing about this reciept is that you can spend time with your family while the dinner is cooking and it is easy to clean up.

Good luck
I suppose since he has an ulcer and a small appetitie then you don't want anything in any heavy sauces or red sauces.

Parm. cheese crusted chicken. Pound boneless chicken breast until they are about the same thickness, or just get chicken cutlets. Toss the chicken in about 3 tbsp of olive oil, salt and pepper. Then pour a 1/2 container of parm. cheese on a plate and firmly press the cheese into the chicken. Bake it on a cookie tray at 450 for about 15 - 20 minutes depending on the thickness of the chicken. Serve with a tossed salad and parsley potatoes. Just quarter and boil red skinned potatoes in water you have salted liberally. Once the potatoes toss the potatoes with a few tbsp. of butter (depends on the number of potatoes you use), fresh diced parsely and pepper. Taste the potatoes before you serve them. You may need to add more salt. They taste better if you salt them while they are still hot. You can't really mess this up and it will take less than an hour to prepare start to finish.

If you're old enough a nice dry white wine would be good. You should be able to get one for about $15.
I dont know how much you want to spend, but steak and crab legs is fancy but so easy. Put your boyfriend in charge of the steaks, he can grill them and to cook the crab legs, all you do is boil them for about 5 min!

Otherwise try something simple like spaghettie, meatballs and garlic toast. With a fresh salad to start. Making this pretty much everything is pre made you just have to follow the directions on how to heat it up.
Pork medallions, smashed taters and green beans.

Get some boneless pork chops, pound them flat. Wash in egg and dredge in bread crumbs. Fry or bake till done.
Smashed taters come out best ifyou use small red or yukon gold potatoes. Don't mash them all the way...leave some nice chunks.
Green beans are great if you saute them in olive oil and butter with garlic and slivered almonds.
It sounds much harder than it is..really. This is simple and impressive.
since this is the first dinner with him and your family I would try to make a dinner that is easy and allows you to do most of the prep work before the guests arrive. You're going to want to be available to socialize and keep him comfortable around your family and vice versa. Have you thought of having a BBQ? Salads and sides are easy and can be made ahead of time and burgers only take a little while on the grill; to please everyone have lots of toppings people can choose to put on their burgers (tomatoes, onions, different cheeses, grilled pinapple rings, etc.). Often casual food creates a casual environment and puts everyone at ease. Good luck!
You could keep it really simple by buying a couple of fresh, whole roasted chickens from Costco or your local grocery store and put them in the oven to keep warm (serve on a nice platter for presentation - add a bowl of gravy if you like). Add a salad, some baked potatoes and some corn on the cob or bread etc. and maybe some fresh fruit for dessert. EASY! - No fuss, good tasting and ulcer friendly.

Good luck.
