How about Lasagna, it's pretty simple. Otherwise I made this dish the other nite for family that came to visit and It was chicken, like chicken breast, a small round pasta, alfredo sauce and spinach and sun dried tomatoes, I bought it like that from Sams' Club, it was marvelous! But I think next time I will make it on my own like that pretty simple. Good Luck!

marinate chicken in either Greek or Italian dressing and grill it.
Put a beef roast in a crock pot (no kidding this really works!)
Take your coffe maker and make a 2nd pot with used grounds. Pour the weak coffee over the beef and let it simmer in the slow cooker.(And if you use one of those liner things the cleanup is a snap!) Makes a fab gravy mmmm!

why not roast a couple of beer can chickens, or make a roast or chili in a slow cooker is so easy.
Just because it's been done once doesn't mean it can't be done again. Bar b que is versatile, not everyone grills the same things. So is spaghetti, I don't know anyone who makes it exactly the same as the next person. Fix what you are comfortable fixing.
Thank God for crock pots! Here are some ideas for you:
1. Pork butt and saurkraut: In crock pot, mix two jars saurkraut with 1/2 cup brown sugar and 2 apples finely chopped. Season pork with salt, pepper, sage and sit on top of saurkraut. Place on low and cook for 6 -8 hours. Serve with mashed potatos and glazed carrots.
2. Chicken and artichokes: Purchase a large bag of frozen chicken breast tenders (not breaded). Marinate overnight in Italian dressing. Place in baking dish and sprinkle with salt and pepper. Take 2 cans of artichoke hearts, drain (retain liquid) and chop into quarters or so. Sprinkle on chicken. Take 2 containers of feta cheese crumbled and sprinkle on artichokes. Take 1 can cream of mushroom soup and dilute with liquid from artichokes. Add sour cream to make sauce. Spoon over chicken and bake at 350 degrees for 1 hour. Serve with rice pilaf.
3. Swedish meatballs and noodles: Take 3 lbs lean ground beef and mix with 3 eggs, 2 pkgs Liptons herb and garlic soup mix, 3 T worcestershire sauce, 1 1/2 cups bread crumbs. Add salt and pepper to taste. Mix thoroughly and form into 1 1/2 inch balls. Place in baking dish. Take 2 cans cream of mushroom soup, 1 16 oz container sour cream, 1T dijon mustard, 1/2 cup white wine and blend until smooth. Pour over top of mushrooms and sprinkle with shredded parmesan or asiago cheese. Bake for 1 hour at 350 degrees. Take 3 packages of wide egg noodles and cook according to package directions. Drain and place on serving platter. Top with sauce and meatballs. Enjoy!
Why not try a Soup bar? You can make a large pot of soup, create baskets of wonderful breads....or, pick a theme...maybe mexican? You can do a taco salad bar as well...make crispy shells out of tortillas to use as the "bowl" and display bowls with different fillings, grilled chicken strips, sauteed beef, shredded lettuce, sour cream, salsa, etc...
and you can serve sopa pillas for dessert and you're good to go! Inexpensive, filling and fun... :) Tip: call ahead to a local mexican restaurant, have them prepare everything for you and simply transfer it into more decorative bowls and such. Its hard to put everything together when you are working full time...

Do a chili supper.Take and brown about 4 pounds ground meat.Put in 1-chopped onion,3-cans whole tomatoes,2-packs chili mix,3-cans pinto beans,2-cans kidney beans,2-can black beans(rinse and drain all beans)1-can whole corn.Leave them to boil.Once they cook a while add 2-packs of Hidden Valleys Original ranch dressing to the chili.Stir well.I put the mixture in a large crock pot all day while I work.Make sure to have small bowls for them to eat out of.Happy Cooking..
Roast beef and gravy. Can't get any easier than that. Get sliced roast beef at the deli and arrange the slices in a baking tray. (one of those disposable aluminum ones) Cover it in gravy and heat it up. And seasoned roasting potatoes (those tiny little ones) go great with the roast beef!
