Meat and cheese platters, veggie trays with dip, containers of potato salad or coleslaw from the deli, small pizzas that they can reheat in the microwave, hot dogs already in buns and ready to heat, ham or tuna or chicken salad, chef's salads, etc.
You can also buy "heat and eat" containers of macaroni and cheese, beefaroni, ravioli, and other entrees in individual servings.
well, what do they like? if it comes in a box get some of it (cheezeits, pretzals, etc). have a variety of lunch meats, there are few people who wont eat a sandwich if they are hungry, plus if you leave a variety of stuff they can put whatever they want on it.
Buy a box of Knorr's Vegetable mix and make the spinach dip on the back. Tear apart pieces of different breads for them to dip into it. It is a hit to everyone I know. Also, try to leave a bunch of fresh fruit out. I'll tend to snack on those when they are in my face.
I probably would have suggested the same as above, but I got the impression that you want to make the food. If that is the case, the links below have recipes you can make ahead of time and store in the fridge or freezer. Lasagna would be great for your brother. Also, soup or chili is great too!

perogies=similar to small hot pockets but home made.
pigs in a blanket
one gigantic lasagna

i assume you want actual food they can eat themselves that will keep for a while, not snack food only.
Make up some wraps with some tortilla shells... can put a variety of foods in them... basically whatever they like... let your imagine go wild or just look in the fridge or the cupboards...
