No catfish taboos. The Chinese generally like anything that is well cooked and flavorful. And any good guest will try what they are served before making a judgement.
Shanghainese style chinese food is typically sweet and oily (by western standards). They have a very famous fish dish using the yellow croaker fish with tofu and a sweet, oily sauce.....yum.
Realistically, your guest will probably like the catfish - unless he doesn't like fish in general or is feeling timid about trying new things and the preparation is not something he is familiar with...i.e. fried in cornmeal. You might make your entire meal more Chinese friendly by serving a rice-based dish along with your fish.
I think the odds are in your favor - someone intrepid enough to travel to visit the States from China is open to new experiences, new flavors and new fish! Good luck.

Sure I would cook them some catfish and some cole slaw,tators, and hush puppies and some other down south food. I think it would be enjoyed greatly
