Depends what type of food she likes (and you)!.
I made an onion pie last week which was really good - you basically caramelise 4 red onions in a pan for about half an hour, then put into a pie dish, and top with a kind of cheese scone mixture, then bake it until its cooked. Or, how about a stir fry with chicken and vegetables (carrot, onion, peppers, mushrooms, beansprouts), bamboo shoots, lots of fresh ginger and garlic, soy sauce and noodles? Really easy, but really tasty.

take a fillet of cod fish (the meaty part of it) and marinate with garlic, ginger, soy sauce and salt. put it in a steamer, and steam till cooked.
toss salad leaves, cherry tomatoes, cucumbers, carrots and any other vegetable you like and dress it up with any dressing you have at home.

Simple tuna salad-cooked/cooled shell macaroni, favorite tuna, miracle whip or Hellman's mayo,(which ever you prefer), chopped celery, peas(canned or frozen) If you use frozen can cook them along with the macaroni. Diced green onion if you like. Spoon into lettuce cups with tomato slices on the side.
Fruit salad-any fresh fruit that you like. Can use grapes, apples, oranges, pears, Bing cherries, canned pineapple, chopped walnuts. Mix orange juice/lemon juice/lime juice together with a small amount of sugar and pour over fruit then toss to mix. Serve in a parfait glass or wine glass for a nice look. Can drain all fruits(canned) of your choice and then just mix in cool whip. The first is very refreshing and tasty. Angel food cake slices make a nice dessert with the fruit, with a dollop of cool whip. Use your best dishes if you have them. Mix up the dish colors and just use a place mat under each. If you don't have then use whatever you do have. A towel in a pretty color, woven mats, small rugs, table runner, piece of lace. Use your imagination. Make it look like a feast for a queen. Mom will be impressed. Use your nicest silverware. Any nice big napkin(paper will do).

How about parmesan baked chicken breasts? Put a little melted butter on the skin, salt and pepper, then coat with parmesan, and bake till done and golden crispy. Simple but... yum. A little broccoli, some rice, a salad.
