Hmmm.that's a tough one with out knowing what your budget is or what kind of cuisine your Mom likes. Is taking her out to eat an option?
It would help to know what she likes
Think of her favorite meal and make that.
Since you want to make a dinner for her and you don't mention her likes/dislikes, make a buffet table. You can slice up her favorite fruits and vegetables and arrange them nicely on some fancy platters. Then put out whatever types of breads you have on another fancy tray. Make sure you warm up the bread in the microwave for about 5-10 seconds first. Then, go with what you know how to make already. If you're a good cook, try some good recipe that you know (chicken breast is always a tasty healthy choice). If you aren't much of a cook, look in your pantry for things like microwave macaroni/pasta and serve it in a fancy dish. Be sure to put a nice tablecloth on the table if you have one. Do whatever decorating you can afford (balloons, streamers, etc.). If flowers are available/affordable, use them in a nice vase for your dinner centerpiece. Set the table with the best dishes you can find in your house. Make the dining area appear as fancy as possible. You might even play her favorite CD during dinner. Your mother will love it! Also, be sure to wash the dishes for her and put them away after dinner.
Layered Mexian Casserole
1/2 pound ground beef
1 11oz. can whole kernel corn, drained
1 1/2 cups salsa
1 cup cottage cheese
1 8oz. container sour cream
5 cups tortilla chips, divided
1 1/2 cups shredded cheddar cheese, divided
Preheat oven to 350 degrees F. Brown meat in large skillet; drain. Add corn and salsa; mix well. Cook until heated through, stirring occasionally. Set aside. Mix cottage cheese and sour cream.
Layer 2 cups of the chips, 1/2 of the meat mixture, 3/4 cup of the cheddar cheese and 1/2 of the cottage cheese mixture in a 2-quart casserole dish. Repeat layers of chips, meat mixture and cottage cheese mixture.
Bake 35 minutes. Insert remaining chips around edge of casserole; top with remaining 3/4 cup cheddar cheese. Bake and additional 10 minutes or until cheese is melted.
Yield: 6 servings
Start with a refreshing Spinach Strawberry Salad
1 lb spinach (I pinch off the larger stems)
1 pint strawberries, sliced set a few aside (egg slicer works wonders)
1/2 cup pecans, toasted
DRESSING
1/3 cup raspberry vinegar
1/2 cup sugar or sugar substitute
1 teaspoon dry mustard
3/4 cup vegetable oil
2 teaspoons poppy seeds
1. Toast pecans over low heat, set aside to cool.
2. Combine dressing ingredients and shake well.
3. Toss and garnish with a few sliced strawberries.
4. Serve immediately.
Then make for your entree
Easy Homemade Ravioli w/ tomato sauce...
Sauce
1/4 cup vegetable oil
1 cup finely chopped onions
2 cloves garlic, crushed
1 (28 ounce) can crushed tomatoes
1 (5 1/2 ounce) can tomato paste
1 1/2 cups water
1 teaspoon salt
2 tablespoons parsley
2 teaspoons sugar
1 tablespoon oregano
1 teaspoon basil
1/4 teaspoon pepper
Noodles
3 cups flour
4 eggs
1/4 cup water
Filling
3/4 lb ground beef, cooked
4 tablespoons cheddar cheese
1 tablespoon fine breadcrumbs
1/4 teaspoon pepper
1/2 teaspoon salt
1 egg, beaten slightly
1. Sauce-In a saucepan, or crock pot, combine all ingredients.
2. Heat until boiling.
3. Cover, reduce heat and simmer at least 30 minutes, until flavours are well blended.
4. Noodles- Mix together.
5. Knead for 10 minutes or until dough is elastic.
6. Add more water or flour accordingly.
7. Filling- Mix all ingredients together.
8. Roll out dough, cut into small rectangles, or circles.
9. (I use a hunky bill's perogy maker and fill the pouches as directed.) Fill pockets with filling.
10. Seal the edges with a little bit of water and pinch closed.
11. (Or add a second layer of dough on to your perogy maker and use rolling pin to seal edges.) Cook in boiling water for 15 minutes.
12. Serve with prepared sauce.
13. Especially good with garlic bread and sprinkled with Parmesan cheese.
For Dessert
Make a brownie cut a rectangle piece w/ chocolate sauce and Carmel Sauce sprinkle w/ Cinnamon. Get a whipped topping adding a splash of vanilla extract and dollop on top then sprinkle with a little cinnamon. Serve Brownie Warm so the smells will linger.
