Answers:
i like any cheese! but buying the cheese is the easy part, make sure it's a room temperature before serving... have a nice range (5 or 6 is a good number) and make sure you have a range of soft, hard, strong, mild, cow, goat, etc.
importantly, make sure there's enough of each one: very embarassing when the cheese runs out before the guests are satisfied! (i always keep a spare selection in my fridge, in case it runs out) (oh and one of the cheeses should be a big, massive, camembert/brie type cheese, it looks really impressive if you serve it in the wooden box) (you could even bake it, to have a warm option)
and with it, obviously serve a selection of breads: i like a nice traditional white baguette, as well as some wholemeal sour-dough type bread.
... but to make your evening more interesting, make it a wine tasting evening! get each of your guests to bring a good quality bottle of wine (probably red is best to have a good selection and for the cheese).
then "dress" each bottle with some wrapping, and number each one. then get people to taste each one, vary the cheeses they eat it with, and find out which is your favourite one, which smells/tastes of certain aromas, it's really fun and it's great if you're getting people that don't know each other well, because it's a great topic of conversation for the whole evening!
to make it even more interesting, put a really cheap bottle in as well, and see who's the cheap-date!!
i like to organise these cheese and wine-tasting evening regularly, and they are always a success!

I'd go for red wine with cheese, but you know what - sod all those wine experts, if you like the taste of the wine then that's all that matters.
Cheese, hmm.. I like most cheeses. Brie, Edam, Danish Blue..
I'd definitely stick some mild cheddar on the plate for those who don't like strong cheese.
Get some cream cheese too; I think there's one called Boursin, it's got herbs through it and it's really nice.
It's good to have a range of biscuits to stick the cheese on too. Crackers and oatcakes are my favourite. I'd get a "box-o-wine" and a can of cheese wiz.

I like all the creamy smelly cheese like gorgonzola, brie, camembert.
Also the caerphilly cheese with cranberry. In fact I like all cheese.
