Be creative: Myself I will season to taste using cajun spices, then add onions, peppers and mushrooms. Wrap portions individually in aluminum foil and baked at a low temperature (300 degrees) for 30 to 40 minutes or until desired tenderness is reached. Remember fish do not take long to bake. This is my own recipe.

Easy Orange Roughy Bake
1 1/2 to 2 pound orange roughy filets
1 can cream of mushroom soup or cream of celery soup
1/4 cup milk
1/2 cup shredded mild cheddar cheese or 1/4 cup grated Parmesan cheese, optional
1 1/2 cups soft bread crumbs tossed with 2 to 3 tablespoons melted butter
Arrange orange roughy filets in a shallow buttered baking dish. Combine soup with milk in a saucpen over medium low heat; heat through. Pour soup mixture over the fish. Sprinkle with shredded or grated cheese and buttered bread crumbs. Bake for 10 to 15 minutes, or until golden on top and fish is cooked through and flakes easily with a fork.
Orange roughy recipe serves 6 to 8.
ORANGE ROUGHY WITH BRUCSHETTA TOPPING
Drizzle the roughy fillets with olive oil, and sprinkle with sea salt and pepper. Put in the oven at 325 for about 20 minutes. While the fish is cooking, dice Roma Tomatoes, Red Onion,and julienne some fresh Basil. Mix this all in a bowl with a splash of olive oil, balsamic vinegar(white balsamic if available), white wine, and salt and pepper.
