It’s my first wedding anniversary this weekend and I’m planning a romantic picnic on the beach, if the weather holds. Do you have any suggestions on romantic picnic food that travels well (about an hour from the beach)? I’m not the greatest cook around.

Answers:
Make a variety of finger sandwiches- I would make one peanut butter and jelly sandwich cut into four triangles, one tuna sandwich cut the same way, a pimiento cheese sandwich, chicken salad, cucumber. Just make up a few creative sandwiches. Cut the crust off of all of them so they are like tea sandwiches- wrap them in wax paper then plastic and place them on a bag of frozen peas for the hour drive.
Add a bottle of wine or some home brewed tea. Dip strawberries and grapes into melted chocolate and let them harden on parchment or wax paper. Place them in a basket with a pretty liner and you have a simple but creative romantic picnic. If your husband does not drink wine then chill some bottles of his favorite beer or other beverage. Think about what his favorite foods are, if none of the above appeal to you. But throw in somthing new and different to eat to keep it more exciting. (alot of stores carry the small round trays of shrimp with cocktail sauce in the center) no preparation there. Have fun- take a kite with you if it is breezy enough.

KFC...take it out of the bucket into ur basket (who doesnt like cold chicken...yum), strawberries for desert, chocolate bon-bons, lots of water (bottled), chips and dip, fruits any kind for snacking later...* DESSERT..on the beach* *WINK*WINK* !!!
Here's a great idea that dosen't require cooking, and will hold for over an hour w/out refrigeration:

A bottle of wine (red dosent need refridgeration)
Some "gourmet" crackers
Some cheese (swiss, cheddar, jack...it really dosen't matter)
Mustard to spread on your cheese and crackers.
Fresh fruit (strawberries, and grapes) to feed each other

Perfect recipe for romantic snack/appetizer.(YOU are the main course)
Hire a guitar player, or find a place where you might be able to here some live acoustical music. Write a dedication to him and read it to him. Have a small fire going. Get a bottle of white wine, cheese, some Gorgonzola, Swiss, cheddar, and make some bruschetta (recipe below) to put on top of sliced toasted baguette.

Also, take Orange slices and dip them in chocolate. Forget the Strawberries, and here is why...

Later when you get home, take an orange, unpeeled, and dropp it in very hot tap water for about ten minutes. Take it out, core it leaving the peel on, blind fold him, go get your orange, and use your imagination. Hole in the warm orange, him, and you. Have two of them and let him eat one while you are doing your thing. He will never beable to look at an orange the same way again...


Tomato & Herb Bruschetta

1 1/2 pounds plum tomatoes, seeded and chopped
1 small garlic clove (minced)
1/3c. fresh basil (chopped)
2 tsp. fresh oregano (chopped) or 1/2 tsp. dried
1 tbsp. olive oil (extra-virgin)
1 tbsp. balsamic vinegar
1 tsp. fresh lemon juice
salt and freshly ground pepper

6 1/2 to 3/4 inch thick slices of crusty bread, grilled or toasted

Serves 6.
