parboil some potatos and carrots cut into smallish pieces (peeled or not..) drain when semi tender. stick a whole chicken in the oven preheated to 425 degrees f (or just a very hot oven.) add a chicken to a large shallow pan, add herbs fresh or dried (rosemary, herbs de provence). add the potatos.dot veggies w/butter. add salt pepper to everything.
rost about 1 hr. if veggies not brown, remove chicken, let it rest 15 or so min. turn oven to max and keep cooking veggies, turning occ.

this is very little work, all cooks together while you relax, and everyone loves it.
for dessert, ice cream w/choc sauce and toasted slivered almonds. (put nuts in micro in thin layer, cook severl min. watch they don't burn. voila!ps chicken shd serve 4. make more potatos than you think you need, they are popular! i forgot: for a 1st course, mixed baby salad greens, pate w/crackers, cheese tray w/crackers, sliced tomatos and sprinkled blue or feta cheese, olive oil dressing.

Boiled broccoli, baked chicken and vegetable soup (carrots, potatos, big onions and tomato).
Course 1 - Salad. Take some Spring Greens, dress them with a basic honey mustard type of dressing (homemade or store made), toss in some chopped walnuts, cubed red apple and some feta cheese.

Course 2 - entree. Four to choose from

a) Chicken - Butterfly a chicken breast, put some honey ham and thin slices of swiss inside. Dredge in some bread crumbs, fry until done. Top with another slice of cheese and broil until melted. Sides - Anything Green (perhaps broccoli or asparagus), and some glazed carrots (just take some frozen carrots, heat them, drain them, then add some butter and honey)

b) Beef - take some roast beef from the deli (not pre-packaged) sliced a little thicker than the thin deli sliced. Set aside. Make some mashed potatoes, add some minced garlic, butter and horseradish (not the sauce kind). Take four pieces of the roast beef and arrange like the 4 on a die, except make sure they touch in the middle. Take some of the potatoes, put in in the middle, and roll like a burrito. Put them in a baking dish and bake until warm. Make some packaged brown gravy, add some pepper and garlic, and use as a sauce over the rolls. Sides - you already have the potatoes inside, so I would do some Brussels Sprouts.

c) Pork - Take a butterflied boneless pork chop. Sprinkle each side with some olive oil, then some salt, pepper and some rosemary. Pan fry or grill until done. Split the butterfly and arrange over some Dill-Rosemary mashed potatoes (just make mashed potatoes and add dill and rosemary), with a side of some dill corn. (corn with butter and dill)

d) fish - Take two tilapia filets, dredge in egg and flour, and fry until done. Take some mayonnaise, add some garlic and lemon juice, mix and set aside. Take the two filets, and arrange on a plate and drizzle the sauce over them. Serve with a cherry tomato salad (cut some various cherry/grape tomatoes in half, drizzle with olive oil and dill), and perhaps some asparagus.

Course 3 - dessert
Two options - One is to take some various berries, some chocolate sauce and some whipped cream. Take some whipping cream and beat until thickened, but not whipped. Add a little chocolate sauce and beat again until thickened but not whipped. Then, take another batch of whipping cream and whip until beaten (or take some cool whip, add the chocolate sauce, and save some un-chocolated cool whip for later)

Put some berries in a fluted glass, drizzle some of the chocolate cream over them, then a dollop of whipped cream. Layer and repeat until full. Then, if you have a chocolate bar hanging around, grate some chocolate over the top for garnish.

Second option is to get a pre-made dessert at the grocery store and serve as is - desserts are hard to make quickly, especially when you have other things going on at the same time. With all of these entrees, I think Creme Brulee is a great dessert to go with it.
First course: French onion soup.
Slice yellow onions thinly ahead of time in rings (need about 4 cups). Store them in the fridge. When you're ready to cook them, melt about 4 tablespoons butter in a heavy-bottomed saucepan, then add the onions and cook over medium-low heat till carmelized. Pour in 4 cups beef broth (4 cups water plus four cubes beef bullion), black pepper to taste, and a few dashes Worcestershire sauce. Top with French bread and melted Swiss cheese.

Second course: Tender, juicy roast beef with potatoes and carrots, and mixed green salad.
Place frozen or fresh roast in a crockpot in the morning before you leave for work. Add enough water to cover the roast. Put in a whole onion, peeled, 4-6 beef bullion cubes (depending on roast's size), 1-2 cloves minced garlic, black pepper, and parsley to taste. Cook on high all day (yes, on high--otherwise it will not be fork-tender). An hour before dinner, toss some baby carrots and peeled cubed potatoes in the crockpot.
For the salad: buy a bag or two of mixed greens that are prewashed. Put them into a pretty bowl, then add mandarin oranges (from a can), sliced red onions, and chopped avocado. Serve with poppyseed or vinagrette dressing.

Dessert: Chocolate budini.
You can do this the day before--it only takes about 20 minutes to make the budini batter, and they'll be fine in the fridge, covered, up to two days. To make: melt 6 ounces semisweet or bittersweet chocolate with 1 stick butter. Whisk in 1 1/2 tablespoons liquer of your choice (I like amaretto, rum, or brandy--but it's optional). Set aside. In another bowl, beat 3 eggs with 2/3 cup sugar and a pinch of salt till the eggs are fluffy, light yellow, and have the texture of softly whipped cream. Fold about 1/3 of the egg mixture into the chocolate, then dump the chocolate/egg mixture into the rest of the eggs. Fold in, then pour into six small ramekins (8-16 ounces). When you're ready to bake them, do it at 375 for 20-25 minutes. They should be gooey in the middle, but cracked on top and puffed. Serve with caramel sauce, caramelized nuts, whipped cream, ice cream, or darn near anything else you want to use. It's a very versatile recipe.
