(like in the past we've had italian, fiesta, bbq) We need some more creativity. Some theme that will inspire people to bring foods that relate!

Answers:
Go global.
Have everybody pick a different country - put up a map of the world and have people put their name on the country that they chose (you can use post-its or thumb tacks).

You could also try all appetizers, all desserts, childhood memories, Hawaiian luau, themes that go with holidays in the month (e.g. St.Patricks' day Irish food, Valentines Day romantic food/aphrodisiacs-maybe that is dangerous at an office get together).

Other Answers:
Have each family bring food from their different ethnic backgrounds...
We have a monthly potluck too and it can get tough! Something I've started to do when it gets to be my turn to decide on a theme is to go to the Yahoo Greetings section and look up the Celebrate The Date section. For example, next month there is National Ice Cream Sundae Day, so we might have everyone bring a different topping and the boss will spring for all the ice cream. One month had National Fast Food Day, so everyone brought their favorite Fast Food (a bag of Mc Donald's cheeseburgers, a box of KFC, etc.) Since most people would prefer to buy than make a dish that one was pretty popular.
Hope that helps!
Our company published a cookbook that everyone contributed recipes to. We had a potluck and you had to bring something from the cookbook (but not one of your own recipes). We assigned a section to each person ie: appetizer, dessert, vegetable etc. so that we didn't get all one thing. It was great!
luau
Childhood Favorite
Finger Foods (yes, you can make a meal off of these!)
Fast Food Favorite
Family Favorite
Tailgate Party
Picnic Food
soul food
I organized a Pot Luck supper at my church several years ago, and what I did was make up little slips of paper with the names of different countries. When you signed up to come to the supper, you pulled a slip out of a hat and had to bring a dish from the country on your slip.

How about a chocolate pot luck? Or a formal English high tea? Or an all vegetable dinner?

MEXICAN!!

Here's 2 great refreshing recipes that is filling and not expensive.
I modified the menu to feed 20

CHICKEN SPINACH SALAD
14 bunch fresh spinach washed and dried, or cheat and get 10 pkg of the prewashed ones at the market
10 chicken- boneless breast, grilled or boiled, then diced and chilled.
10 cup dried cranberries
10 cup chopped pecans or walnuts or both.
5 cup sunflower seeds, or put on side
10 cup feta cheese
any viniagrette dressing

Mix ingredients together and add dressing right before serving. Best serve chilled. Goes great with a glass of iced tea!

MEXICAN CABBAGE SALAD
10 cabbage, finely sliced
12 avocado, ripe, peeled and diced
12 bunch cilantro/coriander, finely diced
10 large tomato diced
5 c diced celery
5 c brown onion, diced
5 fresh jalapenos, seeds removed then diced
Mayo
salt/pepper to taste

Add the cabbage, then the cilantro, tomato, celery / onion, jalapeno and a dash of salt/pepper.
Add the avocado then 2 -3 cup of mayo or just enough to moisten to your taste. Mix well.

Chill for 1 hour and serve cold

Serve the above with bread and beverage.
What about comfort foods? Have everyone wear comfortable clothing (pj's encouraged!) and bring mashed potatoes, corn, chicken fingers, desserts, etc. Or, try a TV dinner type thing and offer foods mentioned in your favorite olf TV episodes.
