Here are some friends with simlar question as we.And I have this question for many days,anyone help us?

I don't want beans 'n cornbread, but you know... Country elegant Bed and Breakfast wedding in Tennessee, we are on a very tight budget, it will be warm outside - there is a small open party room with ceiling fans, casual, inexpensive foods, probably not a whole meal, but enough so that guests don't leave hungry, there will be wedding cake and other sweets also :)

If it is hot outside, the last thing you want is heavy or sticky when everyone is already dressed up and hot, so good call on no beans 'n cornbread. It might also eliminate a lot of standard meat-fare (meatballs, pulled-pork etc), so your going to need some sort of cold cuts spread.

There are any number of appetizers consisting of bite-size tortilla rollups (salmon rollups for example). An olive, red pepper and fresh mozzerella platter with some crackers would be reasonable. You could add some croissants, with cheese and fruit spreads for mixing and matching purposes.

For a local touch, you could serve some locally produced ice cream to go with the wedding cake.

Also, make sure that your guests are crystal-clear on what kind of food to expect. If they expect a meal, and get hors' d'oeuvres, guests will get grumpy and go to Burger King.
have a bar-b-que. it's inexpensive and can feed lots of people. u can have potato salad, corn on the cob, baked beans. everybody loves bar-b-que. by the way my husband said if u have the bar-b-que he'll be expecting an invitation in the mail. lol
grapes apples pinapple watermelon that's what i would stick with and mabey for dessert you could have chocolate cake. what size depending you should not get a designer cake too much. get 1 layer cake about 5 and crackers and dip Susie

collard greens
fresh green beans with garlic and onions
fried okra or okra with tomatoes and corn

Meat

fried chicken or chicken in a cream sauce

home made biscuits with a honey glaze

garden salad w/ at least 2 dressings
You can have a smorgasboard. Have cold meats (roast beef, chicken, turkey etc) which you can cook day before. Make up lots of salads, and have a few sweets (fruit salad, trifle, cheesecake)
For starters you can have meatballs with toothpicks and dipping sauce, mini quiches, sammoosas. If you get your family to help cook, then you ay be able to afford to pay someone to waiter.
If its an outdoor wedding have a Tuscany type of theme

Spaghetti (made ahead sauce with strings)
Cole slaw
salad (antipasto)
garlic bread
cheese and fruit platters
There's a million ways u can go with this. You can do small portions and great flavors mixed with excellent presentation for cheap but people will leave hungry or at least wanting more, or you could go mass food that looks like you're at a carnival and everyone leaves unbuckling their belt. I think you have to come up with a general theme or mood you want to create. There's easy cheap things you can do. Love fully loaded baked potatoes? Make a fully loaded potato salad. Meatloaf, cornbread, both easy, both cheap. Let's make the meatloaf, cut it into bite-size pieces. Then let's make the cornbread batter. Next coat the meatloaf with the cornbread batter then fry. Serve with a ketchup dipping sauce. Country, yet different and a little classier. Even for a dessert, take sweet potato pie and use a thin shot glass to cut pieces out of the pie to create bite-sized pie delights. Top with your favorite potato pie toppings. I have a ton of them!
Maybe not to country but, what about meatballs, scalloped potatoes, meat, cheese trays, baked beans, fried chicken, macaroni salad, potato salad, veggie trays, fruit trays, chocolate fountain, cheeseballs
I just had a selection of sandwiches and a finger buffet for my wedding. Cost less than £200. Plenty for everyone!

Menu:

These foods are colorful, lots of variety, and most can be prepared ahead of time. Recipes can be increased for more people.

Inexpensive too, with just a few quality ingredients here and there to make it special.

Pork Tenderloins and Bread Basket: Make tenderloins and slice into thin circles. Fan on plate serve with breads, mustards, and chutneys.

Frittatas: Make a few and cut into squares. Great veggie option if you keep meat free.

Cut up different types of grilled sausages: Brautwurst, Polish, etc.... cut into thirds serve with grainy mustard dip and toothpicks.
