Our family reunion is this weekend. We're supposed to bring a meat, 2 side dishes and a dessert. Any suggestions?

fruit salad also doubles as desert, but store bought or home made pie are just as good.

Bring a cold cut platter and buns
Salads are great to...either tossed, potato, pasta or coleslaw

You might want to do a fruit platter for dessert or a cheesecake.


Really good potato dish;
1 bag frozen potatoe diced
1 can cheddar cheese soup
8oz. sour cream
1 can cream of chicken
bake 400 for 45 minutes.
you might question the cream of chicken, but believe me. it's wonderful.


Hot dogs, veggie tray, fruit salad, and a poke cake. bake or cook your favorite dish whatever that might be, never try something new for a reunion it is too risky.


well roasted chicken.. here's one recipe you've never tasted before.. get one whole chicken that fits your broiler, rub salt all over it and inside of it (not too salty!)set aside,get a lemon, juice it and mix it with 1/2 cup soysauce pour it all over the chicken sort of marinating it then fill the chicken with raw tamarind fruits and roast it for 1hr to 1 1/2 hrs. you can baste the chicken with the prepared lemon-soysauce if u want.. when cooked collect the drippings...remove as much oil as you can and thicken it... its really a wonderful gravy for the chicken! For side dishes you can either have a spicy salsa or baked herbed mini potatoes...for dessert fresh fruits will do the trick

I make these for Thanksgiving every year and they are always a hit.

Sweet Potato Casserole

Ingredients:

3 c. of mashed sweet potatoes
1 c. white sugar
2 eggs, beaten
1/2 c. heavy cream or milk
1 t. vanilla
1/2 c. melted butter
1 c. brown sugar
1 c. chopped pecans
1/3 c. flour
1/3 c. melted butter

Directions:

Preheat oven to 350 degrees.

Spray non-stick spray on a 9x13 casserole dish.

Mix mashed potatoes and white sugar well. Add beaten eggs. Pour milk, vanilla, and 1/2 c. melted butter into the potato mixture. Add a few handfuls of chopped pecans and a sprinkling of brown sugar to taste. You can also sprinkle a bit of cinnamon in too.

Mix brown sugar, pecans, flour and 1/3 c. melted butter until crumbly. Sprinkle over the potatoes. Bake for 30-45 minutes.

Very Yummy Corn


Ingredients:

1 can creamed corn (15.25 oz.)
1 can whole kernel corn with juice (15.25 oz.)
1 package of Jiffy corn muffin mix
1 stick of butter, melted
2 eggs, beaten
1 cup of sour cream
? cup of sugar, optional


Directions:

Mix all of the ingredients together. Pour into a greased casserole dish. Bake at 350 degrees for 1 hour.

Lastly, for dessert, how about a Texas sheet cake? Kids love this and it makes a lot too.

Texas Sheet Cake

Ingredients:


2 c. flour
2 c. sugar
1/2 t. salt
2 sticks margarine
1 c. water
3 T. cocoa
2 eggs, beaten
1/2 c. buttermilk*
1 t. baking soda
1 t. vanilla


Directions:

In a large bowl, mix 2 cups of flour, 2 cups of sugar and 1/2 tsp. of salt.

In a saucepan, mix 2 sticks of margarine, 1 cup of water, 3 Tbsp. cocoa. Bring to a boil. Mix with the flour mixture.

In a small bowl, mix 2 beaten eggs, 1/2 c. buttermilk*, 1 tsp. baking soda and 1 tsp. of vanilla. Mix into the above.

Pour into greased and floured cookie sheet. Bake at 350 degrees for 25 minutes. During the last 5 minutes of baking, mix the icing.

Icing Recipe

Melt 1 stick of margarine with 3 Tbsp. of cocoa. Add 3 and 3/4 c. of powdered sugar, 1 tsp. vanilla and 4 Tbsp. of milk. Ice cake as soon as it comes out of the oven.


*Buttermilk – 1 cup of milk plus 1 T. of lemon juice Ok check this out... everybody is going to expect the following things:

Hamburgers, Hot Dogs, Fried Chicken, and some goofy salad that nobody really likes. Lets try something a little different shall we?

Meat:
How about something a little bit unique? If you go to a really nice market you can pick up a whole side of a fish that still has the skin on it. Pick up a nice red snapper or Chillean Sea Bass and dry rub it with the following:

2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

That rub sounds familiar? That is the recipe for Emeril Lagasse's "Essence". Makes a fantastic dry rub.

2 Side Dishes

Ok first, I have this recipe for a really refreshing asparagus salad with a lump crab dressing that is amazing... try it out!

2 small bunches of fresh green asparagus
1 cup homemade mayonnaise
2 teaspoon Dijon mustard
Juice of one lemon
1/2 cup minced onions
1 tablespoon minced shallots
1 teaspoon minced garlic
1/4 cup pressed capers
1 tablespoon chopped parsley
1 tablespoon chopped chervil
1 tablespoon chopped tarragon
1 pound lump crabmeat, picked over for shells and cartledge

Bring a pot of salted water to a boil. Trim off about 2 inches from the bottom of the asparagus. When the water comes to a boil. Add the asparagus and cook for 2 to 3 minutes, (depending on the size of the asparagus) Remove the asparagus and place in a large mixing bowl of ice water. Leave the asparagus in the water for 2 minutes. Remove from the water and pat dry. In a mixing bowl, whisk the mayonnaise, mustard, lemon juice, onions, shallots, garlic, capers, parsley, chervil and tarragon. Mix well. Season the mixture with salt and pepper. Add the crab meat and mix well. Reseason if needed. Arrange the asparagus on a platter and spoon the crab mixture over the center of the asparagus.

Ok great, now one more? You have already put in a lot of effort lets make this one easy!

Rosemary Crusted Redskin Potatoes.

Basically all you do is cut up about a bag of size B redskin potatoes into quarters, drizzle them with olive oil, sprinkle some rosemary leaves, salt and pepper onto them, and toss it in a bowl. Once the potatoes are covered, stick them in the oven uncovered on a baking sheet for about 25 minutes on 400 degrees. It will put a tasty crust on the potatoes and works well warm or cold.

DESSERT

I got something for you that will astonish the croud... i mean people will make up songs about you for this one.

The PERFECT Summer Dessert

Get some of those little strawberry short cakes that they keep in the produce section beside the strawberries and the redi-whip. Basically they are just little round hostes yellow sponge cakes. Pick up raspberries, black berries, and strawberries. cut the strawberries in quarters then toss them all together with the rest of the berries in a bowl with about a tablespoon of sugar. heap about 2-3 tablespoons of berries on to each cake and place in the freezer for about 15 minutes while you do the next step.

WHITE CHOCOLATE GANACHE DRIZZLE!

get about 1 lb of white chocolate (you could even use white chocolate chips), chopped up into small pieces, 1/2 cup of heavy cream and a table spoon of corn syrup. Heat the heavy cream slowly in a sauce pan, until hot, but not boiling. In a separate bowl place in 8 oz of white chocolate chips, and the table spoon of corn syrup. Pour hot cream over the chocolate then whisk until smooth.

Remove your berry filled cakes from the freezer, and with a teaspoon drizzle 1 tsp of chocolate over each cake making quick lines back and forth. after the cakes are drizzled place in the refrigerator until ready to serve.

THIS IS A KNOCKOUT SUMMER DESSERT!

I am a chef in a downtown Pittsburgh restaurant... im tellin you try this out. If your not into the fish then go with something more traditional, if thats your speed but I would give it a shot! The sides and the dessert are killer, use them and you wont be disapointed!

1 BOX OF LARGE STUFFING SHELLS
1 MEDIUM ONION CHOPPED
2 STICKS OF I CAN'T BELIEVE ITS NOT BUTTER

2 ENVELOPES OF IDAHONIAN COMPLETE INSTANT MASHED POTATOES OR MAKE MASHED POTATOES FROM SCRATCH
1 PACKAGE OF SHREDDED VELVEETA CHEESE

COOK SHELLS IN SALTED WATER DRAIN AND COOL TO HANDLE. IN THE MEANTIME SAUTE ONION IN MARGARINE TILL TENDER.

MAKE THE POTATOESS CUTTING DOWN ON THE WATER. ADD THE SHREDDED VELVEETA CHEESE. MIX TILL MELTED

STUFF SHELLS WITH POTATOE MIXTURE. LAYER IN A CASSEROLE SPRAYED WITH PAM. ADDING ONION MIXTURE BETWEEN LAYERS.

BAKE AT 350o FOR 30 MIN. or put in a crock pot.



Breaded Chicken Tenders

Oatmeal Cookies

and a relish dish Olives, pickles etc. ITALIAN BEEN SALAD

1 GREEN PEPPER SLICED IN STRIPS
2 SMALL ONIONS SLICED
1 MEDIUM CAN CHICK BEANS
1 MEDIUM CAN KIDNEY BEANS
1 MEDIUM CAN CAVELLINI BEANS
1 SMALL CAN STRING BEANS
1 SMALL CAN WAX BEANS
1 SMALL CAN LIMA BEANS
1/3 CUP OIL
2/3 CUP VINEGAR
1 CUP SUGAR
SALT AND PEPPER TO TASTE

DRAIN CANNED INGREDIENTS INTO LARGE BOWL, MIX DRESSING AND MARINATE OVERNIGHT. A really great one that almost everyone likes is fruit salad. It's easy to make and it's light.
Also, cold cut trays are always good as well as veggie trays.

Pork loin cooked in a brown gravy w/ white rice. Rice is a dish all it's own.
Desert Id do Pecan pie easy and wont spill.
