Potatoes are too heavy to serve with this dish. It's already very rich and very substantial, with bread, meat, eggs and a rich hollandaise sauce in it. You need lighter side dishes.
My favorite side dish for eggs benedict is asparagus, oven-roasted in olive oil. If you can't get good fresh asparagus, next best would be a little salad of arugala or field greens in a light vinagrette. And I like to have a fresh fruit appetizer, something like sliced canteloupe with fresh sweet berries. Plenty of good hot Kona coffee and fresh squeezed orange juice (or mimosas, anyone?) on the side. And that's enough... don't mess with a good thing.

it's definately some variation of poatatoes, i've usually seen it with hashbrowns though

Simple salad with spring greens, including arugula, radicchio, baby oak &c., served on a bed of romaine lettuce. Keep the dressing simple as well, lemon juice, olive oil, salt and pepper is sufficient.
