For Finger foods, I love the tiny Southwest Vegetable Eggrolls, and for Dinner Buffet would have to be Garlic Redskin Smashed Potatoes
As a meal, I would say fajitas. People can build their taco with as much or as little fixings as they want. You just set out the meat, tortillas, guacamole, sour cream, cheese, salsa, beans, and rice, and people just fill their plate with whatever they desire. It's so easy to prepare, and so good.
lasagna because there are so many ways to make it and it is cheap. one way i make mine and it is out of this world is by using Alfredo sauce and sausage in the layers with mozzarella cheese.
baked Ziti is always easy and cheap. Throw together a tossed salad and some fresh cut italian bread and you are good to go enjoy your get together.
you could also do some sausage and peppers with a nice big sweet onion, that one is a big hit in our house.
Raw vegetables and a couple of dips are always good to have. I like to make meatballs, either Italian style or Hungarian paprikash style. Twice baked potatoes are good and easy to handle in a buffet and are not expensive to make. If turkey is on sale, a roasted turkey can be a good food to center everything else.
