a meatloaf that looks like a cake!
Meatloaf Surprise Yield: 8
4 cups stale bread, cut into 1/2-inch pieces
3 1/2 cups milk, divided
6 tbsp olive oil, divided 1 x onion, diced
4 lb. ground chuck (hamburger)
3 x eggs
2 tbsp fresh thyme, stems removed
3 cups Italian parsley
1 tsp salt 1/2 tsp pepper
1/2 tsp freshly grated nutmeg
1/2 cup ketchup
8 x russet potatoes, peeled & cut into 1" pieces 1/4 lb. butter
1 heads broccoli, cut into florets 1 pt cherry tomatoes
2 x carrots, peeled and sliced into 1/8-inch thick slices
Directions:
Place bread in a bowl. Add 2 cups milk and toss with bread. Reserve.
In a sauté pan over medium high heat, add 2 tablespoons oil and sauté onions for approximately 4 minutes, or until they become translucent. Reserve. In a large bowl, use your hands to mix chuck, eggs, thyme, 1 cup parsley, salt, pepper, nutmeg, soaked bread, onions and ketchup. Divide meatloaf mixture into 2 equal amounts and spoon into 2 10-inch round baking pans. Smooth tops so that they are flat. Bake for 1 1/4 hours. Reserve. When meatloaf is half cooked, boil potatoes in a large pot of water until tender to the touch of a fork. Drain water and mash with 1 1/2 cups milk and butter. Mash until smooth. Cover and reserve. In a blender, puree 2 cups parsley and 4 tablespoons oil. Reserve Divide mashed potatoes into a 4-cup batch and a 2-cup batch. Save whatever is left over for a rainy day. Reserve the 2-cup batch. In a large bowl, thoroughly blend the pureed parsley into the 4-cup batch of mashed potatoes
After the meatloaf has finished baking, steam broccoli in a vegetable steamer for approximately 4 minutes, or until tender. Reserve.
Place the first meatloaf on a cake plate or a regular plate. Spread the top with half of the plain (white) mashed potatoes. Place second meatloaf on top and ice the whole "cake" with the green mashed potatoes just as you would ice a birthday cake. Place the remaining cup of plain mashed potatoes in a pastry bag or a zip lock bag with one corner snipped. Pipe out little potato crowns around the perimeter of the top of the cake leaving a 2-inch space in between each one. Top with cherry tomatoes. Decorate with broccoli, carrots and candles.

rice krispe treats r always fun My Aunt used to serve myself and my little friends the small slips of paper. It didn't look filling at first but about 30 minutes later we were all floating around eating clouds.

Rice crispy treats are amazing, even at four. It is a cereal that they are probably familiar with, used in a completely different way. It may even make your child more likely to eat decent, wholesome ceral instead of that icky, sugary cereal you may have them hooked on.
