Here are some friends with simlar question as we.And I have this question for many days,anyone help us?

If you are making it yourself...just be sure it's fresh fish and tuna usually does well, and anything with cooked crab or shrimp is usually to most people's taste. If you are catering or picking it up somewhere, I don't recommend anything with odd textures like roe or urchin, most people don't like them.

The "rolls" are the best since people can pick up the ones they like best. So have a variety of cut rolls and plenty of wasabi, ginger and beer!

Also not everyone likes the raw stuff. Get the california rolls or cooked stuff too

If you're really a good host, don't forget the saki and Japanese beer.

You should serve a variety of nigiri sushi and maki rolls. Everyone has a different preference. Some people don't eat raw fish, so cooked maki rolls are preferred. I usually serve whatever I like; salmon nigiri, california rolls, tempura rolls, ... I usually serve sushi as an appetizer more than a dinner entree.

Veggie Rolls (just rice, veggies, noori)

and maybe one raw tuna one. go easy on the raw stuff, tho, most folks won't touch it.
FRESH fish only. You can tell if fish is fresh by SMELLING it... if it smells like fish... it's already too old because fresh fish doesn't have a smell.
