The best way I know to cook crookneck squash is to slice it and saute it in butter until it browns on both sides - that's the sugar coming up! It's awesome. OR Try slicing it, brush it with a little olive oil & salt & pepper and grill it. MMMMMM Then I will give you the recipe for the best squash casserole in the world:
12 to 14 medium squash
6 to 7 medium onions
1 carton sour cream
1 tsp seasoned salt
1/2 tsp onion salt
1/2 stick melted butter
1/2 tsp. cracked black pepper
2 Tbsp. Worcestershire sauce
2 eggs, well beaten
1 lb grated sharp cheese(personally, I'd add more)
dash of paprika
1 Tbsp. sugar
2 jars pimiento,chopped
5 strips bacon, fried crisp, crumbled fine(can't have too much bacon either!)
1 1/2 C. au gratin potato chips
Cook squash and onions until tender. let cool, then refrigerate overnight. Mix all other ingredients and use potato chips for topping. Bake at 325 for 45 minutes to an hour. serves 12 to 14!
This is real live "Southern funeral food", which, as everyone knows, is the best food on the planet....Plus, a couple of these suckers will take care of a LOT of surplus squash!!

Squash & Cheese Casserole
3-Medium Zucchini
?-Cup Onion – chopped fine
? -Cup Bacon Bits (Real Bacon)
1-Tsp Garlic Salt
3-Cups Shredded cheese – divided (I use Mexican Blend)
Preheat oven to 375 degrees.
Quarter squash lengthwise then slice into 1/4” thick “moons”
In mixing bowl by hand stir up squash, bacon, onion seasoning and 2 cups cheese. Spray 9” X 3” round baking dish with Pam. Put mix in baking dish and top with remaining cup of cheese.
Bake uncovered at 375 degrees for 30 to 35 minutes. It depends on the type of squash-
Zucchini or yellow(crookneck) - Slice, drizzle with olive oil, season with salt and pepper and garlic powder then grill or roast in an oven at 400 until the edges are browned.
Acorn or Butternut - Microwave! Sounds crazy, but they are very hard to cut when raw, so poke with a fork (like a potato) and microwave for 8-10 minutes (depending on size) until soft. Cut in half, scoop out seeds then season with butter and salt and pepper. I like brown sugar sprinkled on the acorn. Eat it right out of the shell if you like.
Spaghetti - Cut in half - this is difficult, too, but I haven't tried this in the micro. Clean out seeds. Season with salt and pepper. Put cut side down on a sheet pan with a little water. Cook at 350 until soft. Scrape out flesh with a fork for "spaghetti." My favorite way to eat it is to fry it! Slice the squash in thin round slices. Dip in flour, then egg, then mashed saltine cracker crumbs. Drop in pan w/ a little vegetable oil and let them brown on both sides....wallah!!
