Hot & Spicy Ribs

These grilled ribs are basted in a thick, rich barbecue sauce. Remember to grill indirectly to prevent them from getting tough and wait until the end of cooking to baste them. If you want it spicier add 2 tablespoons of cayenne to the sauce.
INGREDIENTS:

3 pounds pork ribs
1 medium onion, chopped
1 can (15 ounces) tomato sauce
2/3 cup cider vinegar
2/3 cup brown sugar
2 tablespoons butter
2 tablespoons chili powder
1 tablespoon prepared mustard
2 cloves garlic, minced
1/2 teaspoon pepper

PREPARATION:

In a large sauce pan, melt butter and saute onion and garlic until soft. Add remainin ingredients except the ribs, stir and bring to a boil. Remove from heat and allow to cool.

Place ribs on grill over direct heat for one minute per side. Move to indirect heated area. Close grill lid and cook for 20 minutes. Turn and continue grilling for 30 minutes. Baste with sauce on one side, grill for 10 more minutes. Turn and bast the other side. Grill until done (about 10 more minutes).

Boil them in water until tender and remove and drain.Cover with your fave bbq sauce.I like the" honey smoke flavor".Cause you can put them in the oven covered in foil and they taste just like they were cooked on the grill.Otherwise if you use another just grill`em. I like to simmer them in beer til tender, then throw them on the grill with some BBQ sauce ( Sweet baby rays)


While boiling is good, baking is better. Bake at 15 min/lb of meat (or till meat is tender & no longer red) on a bed of sliced onions & celery tops, under a canopy of tin foil.

Allow to cool; heat up your grill and place ribs on to heat for about 5 minutes. Start applying BBQ sauce of choice, coating all sides as you turn. Allow to cook on grill till sauce is carmelized (but not blackened) and you will have the best ribs on earth!!


I buy the boneless pork strips and cook them in the crock pot with water and some lipton onion soup mix for about 8 hours. Take them out of the crock pot, put some bbq sauce on them and then bake for about 20 minutes until the sauce is heated and stuck to the ribs. YUMMMMY!!! Cut them apart and marinate in a BBQ sauce of your own choice. Ones high in acidity will probably help tenderize the ribs. Marinate them at least overnight in the fridge. I put them and the BBQ sauce in large ziploc bags (at least gallon size). You might want to move the bags at least once in order to make sure all the ribs get coated and soak up flavor. I prefer to smoke ribs. I get the smoker going (I have a barrel/bullet shaped one) with charcoal (being certain to let any lighter fluid burn off) and some wood chips or chunks on top of the coals. I like to put the ribs on the top rack of the smoker, so you can baste them more easily. Throw away the bags and the sauce you used to marinate the ribs. Total cook time is about 3-4 hours on ideal heat. You should baste (reapply BBQ sauce, preferraby with a brush)the ribs a couple of times during cooking. A more sugary BBQ sauce should help the ribs stay more moist, locking the moisture in sorta like the glaze on a ham. Once they're done, eat and enjoy!
