potatoes grow eyes because they have gone to seed. you can cut them up and plant them with the eyes upward and they will grow into a whole bunch of potatoes.

It's how they reproduce. If you cut it up and plant the "eyes", they will grow more potatoes.

The Better to See you My Dear So they can see who's eating them. J/K. It's a reproductive thing, and they're not good to eat,which is why we gouge out their eyes before eating the potatoes.

LOL! A potato "eye" lets you know that your potato wants to sprout new spuds. My neighbor had this happen to her and she put a few of the sprouting spuds in the ground last year. This year she brought over "new" potatoes.

It takes about 2 to 3 weeks for the eyes to sprout. It's just nature taking its course. You can still eat the potatoes with sprouts. Just make sure that you cut the "eyes" out and the dark spots before cooking. Do not eat the green part because it contains an alkaloid which is poisonous. And always store your spuds in a cool, dry, dark place.
