I eat the center myself and depending on the ripeness, most people do...the center of the pineapple is like the center of an apple.it tastes good to some folks and not to others...when I was young many times I was going hungry for days at a time...I eat everything put in front of me...nothing goes to waste

I do, when it is very ripe. Totally sweet and sooo yummy! The best thing to do with the center of a pineapple in my opinion, is toss it in a Pina Colada mix in the blender... whirl whirl whirl!!
