Whats nice about it you bake it , can be done the nite before and it heats nicely in a microwave.
This one uses zuccihini but you can use any veggie or veggies of your choice or other fillings. Ex: brocolli, peppers, ricotta cheese, cheddar cheese or any type you like or a mixture of cheese, potatoes are especially good. Make it Mexican with chili and peppers to the mix.
If doing ahead just portion serving. They can be frozen for 2-3 months or refgerated for 7-8 days.
Experiment so you don't get tired of the same flavor.
Its is very easy.
BAKED ZUCCHINI FRITTATA
1 1/2 c. shredded zucchini
4 eggs, slightly beaten
3/4 c. fine bread crumbs
1/2 c. milk
1/4 c. grated Parmesan cheese
1/2 c. shredded mozzarella cheese
2 tbsp. butter, melted
1/2 tsp. onion salt
1/2 tsp. salt
1/4 tsp. pepper
1/4 c. finely chopped onion
Combine ingredients. Pour into buttered shallow dish. Bake at 375 degrees for 25 to 30 minutes or until set. Cut into wedges. Serve as a main dish for lunch or brunch.
