Refrain from taking too much starchy vegies, like potatoes, and chow down on leafy greens. Spinach's good for preventing anaemia, which many vegetarians who aren't sure how best to take care of their dietary requirements get. Also, soya bean and soy products like beancurds are excellent a plant protein sources.

the darker the better! Stay away from light colored or white vegetables- ie potatos

Cruciferous are supposed to be some of the best: broccoli, Brussels sprouts, cabbage, cauliflower. And the orange/yellow ones like carrots and sweet potatoes. I think the least ones are probably cucumbers--mostly water--corn and peas, which are mostly starch. Oh, and I suppose a person could live without regular potatoes. Sweet potatoes are better for you.

Well, the most nutritional vegetables are definitely the leafy greens (kale, swiss chard, spinach, etc.) because they're packed with vitamins and minerals. Vegetables like iceberg lettuce provide almost no nutritional value whatsoever, but are still good to eat. Potatoes and other high-carb vegetables should be eaten sparingly.

The (darker is better) rule is pretty valuable. Lettuce, corn and potatoes are the least useful. Artichokes, bok choy, and anything called greens are monsters. Red peppers and carrots are huge for vitamins.

Squash and sweet potatoes are a good combination of taste and nutrition, and fill you up as well.

all vegies are healthy. buy organic and limit the butter, etc you put onto them. eat them often.
