Su is right - a damp towel is recommended to put out oil/grease fires in the kitchen by Fire Safety experts. See below for more information and a quick video.

1. use a metal lid... especially the one that goes with the pan.

2. Also you can use baking soda or salt.

3. When covered or doused with the dry powder, use an oven mitt and move the pan off the heat or turn off the heat.

I thought it was "take it off the heat and put a damp cloth on it"
