"MeMe" is right I am a former chef and it is not normally left in unless you have a hip of beef or a bone-in Steamship round, those are monster sized roasts, used for carving on buffet or BBQ, they take hours to cook, most roast that come from that area are boneless, can be roasted or even used for pot roasts, most is cut for braising steak, stew beef or ground into minced beef.
