Answers: Air has nothing to do with it!. A open bag of chips in the desert will never go stale!. I've lived there so I know this!.
It's humidity/ moisture that makes a chip stale!. The chip is very dry and will start taking moisture from the air as soon as it is exposed to air!. Over time it will absorb too much moisture and loose it's crunch and texture that we want!. Then it's stale!.
Oddly, bread, which is supposed to be moist, is considered stale when it *looses* it's moisture to the air!. It will go stale quicker on a dry day than a rainy one (although it may get moldy)!.Www@FoodAQ@Com
