I was given a recipe by a friend of mine for making proper Italian carbonara sauce:
egg yolks
grated parmesan
ricotta cheese
pancetta
olive oil

I've tried this a few times, and it's sometimes nice, although sometimes comes out very sticky and not all that great. Does anyone know how to solve this to make the perfect proper carbonara?

I've never heard of it with ricotta, but that's just me. Go to www.foodnetwork.com and look up Giada DeLaurentis' recipe. I made it and liked it.

drop the ricotta or if you really need to have it, add it at the very end and don't heat it after that. start with the bacon and oil. when you add the pasta turn off the heat and then add the egg yolk and ricotta. enjoy

You definitely don't need ricotta but fresh cream or crème fraiche
This is I believe the original Carbonara....italian style.
Fry your chopped up pancetta, whilst its cooking prepare the egg yolk, cream, salty pepper mix in a bowl. When your pasta is cooked, strained and still steaming hot, pour in the cream+yolk+ pancetta+salt/pepper.
The heat of the pasta is enough to cook your egg/cream mixture....don't recook it otherwise you end up with a scrambled egg dry pasta disaster!
All you then need to do is grate lots of parmesan cheese over the carbonara and voilà! Delicious! Enjoy....:))
