rthompson1965 is correct. In cooking eggs act as a Binder to hold things together. Without the egg everything more watery. I not use the egg in mine, just make a thick sauce. The Ricotta the cheese of preference, you can try other cheeses. I will give you my recipe for a Kiss!! ;-D
